Copycat Olive Garden Salad

Ingredients

  • 1/4 cup extra-virgin olive oil

  • 3 tablespoons mayonnaise

  • 1 tablespoon white wine vinegar

  • 1 tablespoon fresh lemon juice (from 1 lemon)

  • 1 1/2 teaspoons granulated sugar

  • 1 teaspoon kosher salt

  • 3/4 teaspoon black pepper

  • 1/2 teaspoon Italian seasoning

  • 1 garlic clove, smashed

  • 1 ounce Parmesan cheese, grated (about 1/4 cup)

  • 2 (5-ounce) packages American blend salad mix

  • 3/4 cup pitted black olives

  • 3/4 cup pickled pepperoncini

  • 1/2 cup thinly sliced red onion

  • 2 plum tomatoes, sliced

  • 1 (4.5-ounce) package large seasoned croutons

Method

  1. Make the dressing:

    Combine the oil, mayonnaise, vinegar, lemon juice, sugar, salt, pepper, Italian seasoning, garlic, and Parmesan in a small food processor or blender and process until thoroughly combined.

  2. Mix the salad and serve:

    In a large bowl, combine the salad mix, olives, pepperoncini, onion, tomatoes, and croutons. Drizzle the salad with the dressing and toss to coat. Let stand 5 minutes before serving.
