When I announced I was making a fennel Parmesan salad, my father remarked something to the effect, "That sounds like something for 'ladies who lunch'." (Is that still a thing?) Well, for all of those who "lunch", this shaved fennel salad hits just the right note - cool, crispy, and savory.

It may seem like an odd choice to pair Parmesan alongside fennel, but the combination works well. The fennel keeps its crisp structure, even when thinly sliced, and its licorice hinted flavor beautifully complements the warm, salty, cheesy savoriness of Parmesan.

Thyme and parsley provide the accents along with a simple olive oil and lemon dressing.

This is a quick and easy, simple-to-make salad that would be perfect for a lunch, or as a side salad for dinner.

Ingredients

  • 1 fennel bulb, shaved paper thin with a mandoline or meat slicer

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon fresh lemon juice

  • 1/8 teaspoon chopped fresh thyme leaves

  • 1 tablespoon chopped flat-leafed parsley

  • 2 tablespoons shaved Parmesan cheese

Method

  1. Combine ingredients:

    In a medium bowl add shaved fennel, olive oil, lemon juice, thyme leaves, parsley, and Parmesan cheese. Gently toss all of the ingredients together.
