Mornings, particularly weekday or workday mornings, can be incredibly hectic. A healthy breakfast is often sacrificed, but it doesn't need to be with a little planning ahead a day off.

The recipes in this collection of egg bites, muffins, breakfast casseroles, smoothies, and more make several servings that you can prepare ahead, individually portion, and then grab and go in less than 5 minutes. Some of them are specially designed to freeze and heat up later.

    This casserole-like baked oatmeal is full of sweet blueberries and raspberries, but the fruits are completely interchangeable. Use the fruit you have on hand, or even shredded zucchini or carrots. Have a slice or two right out of the oven, then store the rest for breakfast throughout the week, hot or cold.
